Black Bean and Rice Salad with Roasted Red Pepper and Corn with grilled squash

The recipe for Black Bean and Rice Salad with Roasted Red Pepper and Corn is in Quick-Fix Vegetarian, page 63.

I would definitely recommend this rice salad. (Though I didn't like the salsa Hubby put on his!) I love the combination of beans and rice together, it's so basic and yet satisfying. We used tons of cilantro (it's like catnip to me) and fresh corn cut from the cob! Yummy! It was also great the next day for leftovers.

Quick-Fix Vegetarian looks to be a great cookbook. This is the first recipe that I've tried, but I have quite a few recipes that I notated to make later. I'm always on the lookout for quick and easy recipes. Hubby and I don't have a lot of time on work nights to make dinner and since we avoid most processed foods, it can be quite a challenge for us!
